With an impressive career in the hospitality industry under his belt, from standalone venues to luxury hotels, Nick Comaty first joined SLS Dubai as the F&B Director but has since gone onto becoming the Vice President of F&B Operations of Ennismore, looking after the Middle East, Africa and Turkey. Starting his career in Montreal, Canada, he went on to complete a Post-Graduate Diploma in Glion Institute of Higher Education in 2013. Nick very quickly began a dynamic international career in hospitality working at some of the most well-known hotels and restaurants around the world. Starting at SLS Miami in 2014, he then moved to the iconic Gramercy Park Hotel in New York as Head of F&B before leaving for greener pastures in Dubai. After his move to Dubai in 2016, Comaty joined hotels such as the Four Seasons DIFC and Media One Hotel before joining the iconic Beirut import Sky 2.0 as the Director of Operations where he overlooked and built the now Dubai staple from pre to post opening. Nick looked after everything from operations, staffing, training, to the well-regarded Stars Program targeting Dubai’s glitterati. After successfully launching Sky 2.0, Nick went on to open one of Dubai’s most beloved venues hailing from the beautiful Myconian beach, Nammos Dubai. Nick joined the Nammos family during its pre-opening stages as the General Manager who led the Nammos founders, owners, and team to an extremely successful launch. Nammos Dubai is now not only regarded as a beach club as intended, but as a fine dining destination loved globally. With a slew of new openings around the world it is clear Nick was an important part of building its success from Dubai. Following an impressive streak of work since his move to Dubai, he also consulted on strategy for the renowned Caviar Kaspia in DIFC. Having had experience opening concepts in Dubai originally from overseas to ensure the venue had his success stamp on it. Nick Comaty’s most recent and impressive role as Vice President of F&B Operations comes after his SLS Dubai role where he was responsible for bringing the first Ennismore F&B outlets to Dubai including Fi’lia, S Bar, Privilage, Ella Mia, and Carna from its early conception to its opening. All with its unique and successful concept per outlet, winning multiple awards. For instance, Comaty came up with the concept to make Filia its first female-led restaurant in the region. The now well-known restaurant won since the Michelin Bib Gourmand Award. To summarize the extensive experience globally of Nick, his talents come to show at concept development, market knowledge, hirings and development of his team and business profitability. From creating successful concepts, to ensuring the maintenance and increase in success of each venue over time.
